Coconut Rough Balls (Gluten-Free)

I love my home made chocolate, but I’ve been looking for some new sweets that I can make without too much effort. Ideally, something raw and something that is not too bad for me.

Wifey came across this recipe on Sweet As Honey and suggested I give it a try. They looked and sounded great so I thought, why not.

The recipe is very simple and the balls are quite quick to make. The longest part is waiting for them to firm up in the fridge, but if you stagger the decoration it doesn’t feel like you are sitting around waiting. Eg, roll one plate of coconut balls and put them in the fridge. Roll another plate and put them in the fridge then pull out the first plate and decorate etc.

I found that the mix makes between 50 and 60 coconut balls depending on how big you roll them, so it can serve quite a few!

Coconut Ball Ingredients
  1. 4 cups dessicated coconut
  2. 2 cups coconut cream
  3. 4 tbsp sugar
  4. 7 tbsp coconut oil
Chocolate Coating Ingredients
  1. 120g cacao powder
  2. 8 tbsp coconut oil
  3. 2 tbsp sugar
Coconut Ball Directions
  1. Melt the coconut oil in the microwave or over the stove.
  2. Combine the desiccated coconut, sugar, coconut cream and melted coconut oil in a large mixing bowl.
  3. Mix gently until it forms a sticky batter that can be easily shaped. If it is too soft, put it in the fridge for 10-15 minutes to allow it to firm up.
  4. Cover a tray or a few plates with baking paper. You will need to put this in the fridge so make sure the tray or plates will fit.
  5. Make small balls with your hands and put onto the baking paper.
  6. Put the coconut balls in the fridge for about 30 minutes to allow them to firm up.
  7. Remove from fridge and decorate using the chocolate coating below.
Chocolate Coating Directions
  1. Melt the coconut oil in the microwave or over the stove.
  2. Put the coconut oil, sugar and cocoa powder in a mixing bowl and combine.
  3. Decorate the coconut balls with the liquid chocolate as you like.
  4. Put in the fridge to allow chocolate to firm up.
Hubby Tip 1
  1. You can decorate by drizzling chocolate over them, rolling them in chocolate, or rolling them in chocolate and then also rolling them in some more cacao powder or shredded coconut.
Hubby Tip 2
  1. Store them in the fridge to keep them nice and firm.
